Ingredients
- 2 Medium Aubergines
- 1/2 tsp Turmeric powder
- 1/2-1 tsp Red chilli powder
- 1/2 tbsp Cumin powder
- 1/2 tbsp Coriander powder
- 2 tbsp Oil of your choice, we used olive
- Salt as per taste
Preparation
1. Preheat the oven to 160 degrees. Line a flat oven dish with parchment paper and set this ready.
2. In a bowl, mix all the spices with the oil and give it a good stir. Add the salt as per your preference, remember less is better as you can add more later! Keep this aside.
3. Wash and slice aubergine into slices, just a bit less can 1cm thick. You don’t want to slice these before you mix your spices as they will start to darken. Put these in a large mixing bowl.
4. Add the spice mixed oil to the aubergine and give it a good mix, making sure both sides of all the aubergine are coated. Feel free to add a little bit more oil if it needs it.
5. Place the aubergines on the paper lined tray, laying each one flat and place the tray in the oven. Cook for 20 minutes.
6. Check after 20 minutes if the aubergines are soft and the oil as seeped all the way through. You want them to be soft but not too soft otherwise they will get squishy! Remove from the oven when they look done.
Now serve with yoghurt, add to your sandwich, in a wrap or along with a salad or as part of a larger meal!
