Bhindha nu Shaak

Ingredients

- 200g Bhindha (Okra)
- 1 tbsp Cooking Oil of your choice
- 1 tsp Cumin Seeds
- 1/3 tsp Mustard Seeds
- 1 tsp Chilli Powder
- 2 tsp Ground Cumin & Coriander Powder
- 1/4 tsp Turmeric powder
- Salt to taste
- Small bunch coriander for garnish

Preparation

1. Thoroughly wash the okra and using paper towels or a napkin, dry each one thoroughly. Once dry, slice into 2 cm thick pieces, watching out for any dirt or bad seeds on the inside as you chop.


2. In a pan, add the oil and allow it to heat up. Add the cumin seeds and once they start to brown, add the okra.


3. You will start to see the slime on the okra so don't worry, this is normal. Stir the okra gently, and wait for the slime to totally disappear. This should take up to 8-10minutes.


4. Add all the spices and salt based on your preference. The okra is nearly ready so let it cook in the spices for a further 5-10 minutes and then turn off the heat, sprinkle with coriander and serve.
