Smash Potato Chaat

Ingredients

  • 4 potatoes 

  • 1 tomato, diced

  • Half an onion, diced

  • Green chutney (Please see recipe below)

  • Ambli chutney (Please see recipe below)

  • Nylon or Thin Sev - gram flour vermicelli 

  • 2 tbsp Ghee 

  • 1 tsp Chaat masala

  • Handful of coriander

Preparation

1. Preheat the oven on grill/fan at 200 degrees. 

2. First peel and boil the potatoes in salty water.

3. Whilst the potatoes are boiling, dice up the tomatoes, onions & coriander. Place on the side.

4. Once they're soft, remove from water. 

5. Line a baking tray with paper or I've just recently got this new silicone baking mat! I'll let you know how it is once I've used it for the first time! 

6. Place the potatoes on the tray. One by one, using a flat bottomed bowl or even a small plate, smash the potatoes. 

7. In a bowl, add ghee and chaat masala. If your ghee isn't melted, heat in the microwave to melt.

8. Drizzle the ghee with the chaat masala over each potato.

9. Place in the preheated oven. 

10. Turn the fan off and bake on grill for 20-25 minutes, turning half way through. Adjust this time based on the power of your oven. 

11. Once the edges are crispy and begin to brown slightly, take the potatoes out of the oven and allow to cook slightly.

12. We’re now ready to plate! On a serving dish, add a spoonful of the tamarind and date chutney. Top this with the potatoes. 

13. Next, add the diced tomatoes and onions. You can also add chickpeas or other beans if you want here. 

14. Next comes the chutneys (see recipes below). Add as much as you like, based on how spicy/sweet/tangy you want it!

15. Now, top with a healthy serving of the sev and finished with a sprinkle of freshly chopped coriander. 

16. The chaat should be served immediately to enjoy the crispy potatoes!
