Ingredients
- Parsnips
- 1/8 Dijon Mustard
- Juice of half a lime
- 1 tbsp Honey
- 1/2 tsp Kashmiri Chilli Powder
- Some oil to sprinkle over parsnips
- Salt to taste
Preparation
1. Preheat a oven to 200 degrees.
2. Wash and peel the parsnips. Slice them into chip-like fingers. Place aside.
3. In a bowl, mix the honey, Kashmiri chilli powder, salt, lime juice and dijon mustard. Taste and adjust any of the spice, citrus and salt.
4. Lay the parsnips on a tray lined with baking paper.
5. Pour the honey and chilli dressing over, covering the parsnips well.
6. Put the tray in the pre-heated oven for 15 minutes. Turn and cook until crispy.
7. Remove from the oven, and place on a serving tray. Finish with a squeeze of lemon and a garnish of chopped coriander. Enjoy hot!
