The Kadhi Tee
Khao Suppers presents the Kadhi Tee.
Everytime we make Kadhi at home, one of my fondest memories is hearing Dad recite a small rhyme that goes "Kadhi Kadhi, Lodha ni Kadhi, Brahmin behta Deliyeh Chadri". It speaks about the dish having the power of "a metal", and something about a holy man sitting on a wall?!
It's the symbolism and the few sentences of the opening line that remind me each time of the warmth and wholesomeness of this dish, and the resilience of the recipe as it gets passed through the hands of each generation.
Kadhi, found in every region of India, is a dish made of tempered yoghurt, cooked at very high heat. In Punjab, it is often cooked with onion fritters or pakora, In southern Indian states, it includes coconut in the temper. The way we've had it at home, it is cooked in lots of curry leaves and with ghee, and served with a peas and carrot rice. The Kadhi Tee is our homage to all Kadhi!
